Winemaking

Hand sorting, separate plot vinification and Burgundian-style pigeage. For the documented 2022 vintage, twelve months in barrel: 50% new and 50% one-wine barrels. Documented blend for the 2022 vintage: 75 % Merlot · 25 % Cabernet Sauvignon. These proportions do not apply automatically to other vintages.
