Winemaking
Hand harvesting and spontaneous infusion fermentation with indigenous yeasts in cement vats. Gravity transfer into old 228-litre barrels; twenty-four months in used oak with hand stirring according to the lunar calendar. Unfined, unfiltered and with no added sulphites.
Tasting
Elegant and supple, with an airy, textured palate.
